水煮豆花魚[24P]

[/color]主料:豆花500克 胖頭魚1條
輔料:辣椒粉2茶匙 菜籽油50克 雞粉1茶匙 幹辣椒15克 生粉1茶匙
胡椒粉1茶匙 小蔥3根 泡椒20克 花椒粉2茶匙 蚝油2茶匙
料酒3湯匙 花椒15克 大蒜4瓣 郫縣豆瓣醬2湯匙
水煮豆花魚的做法
1.胖頭魚一條,去鱗去内髒洗淨瀝幹

2.從尾部開始起刀剔下魚肉

3.剔下的魚骨部分剁斷

4.将魚肉用斜刀片成魚片

5.片下魚片(魚片一定要厚度一緻)

6.加入0.5勺食鹽、2勺生粉、姜末、1勺料酒用手輕抓,抓到魚片粘手有彈性

7.泡椒和泡姜切成末

8.準備蒜、花椒和幹紅辣椒

9.豆花事先用小火煮熱

10.炒鍋下入花椒和幹辣椒小火培香成棕紅色後,撈出剁碎備用(不需要太碎了)

11.炒鍋放入菜籽油,加入豆瓣醬、姜末炒出紅油

12.在放入泡姜和泡椒炒香

13.加入高湯或者清水

14.胡椒粉、蚝油等調料放入,略攪幾下,使之調勻熬煮5分鍾

15.放入魚頭和魚骨燒開

16.再調入1勺食鹽和2勺料酒

17.水開後,用筷子逐片将魚片下鍋,加入雞粉小火煮熟

18.将煮好的豆花倒入容器裏

19.魚肉煮熟倒入裝豆花的容器裏,撒上辣椒粉、花椒粉、小蔥末、烘幹的辣椒碎和花椒

20.另取一鍋,加入食用油燒熱,将燒好的熱油倒在辣椒碎上,即可食用

从图片看起来色香味俱全的样子,让人很是食指大动,恨不得大朵快颐一番。做的步骤稍微有点多,不过吃货嘛。都是可以战胜的。个人觉得如果是湘菜的口味的话,可以多放一些比较辣的干辣椒,这样辣辣的才够味道!
